Baked Oatmeal recipe

1 ripe banana, mashed (½ cup) 1 cup unsweetened almond milk, at room temperature ¼ cup smooth almond butter ¼ cup maple syrup ¼ cup melted coconut oil 1 teaspoon baking powder 1 teaspoon cinnamon ½ teaspoon sea salt 2 cups whole rolled oats 1 cup chopped pecans 1 cup blueberries, fresh or frozen

Ingredients

Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking dish.

In a large bowl, mix together the rolled oats, brown sugar, baking powder, cinnamon, and salt.

In another bowl, whisk together the milk, eggs, melted butter or coconut oil, and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until well combined.

Pour the mixture into the prepared baking dish.

If desired, add your choice of toppings like sliced bananas, berries, nuts, or chocolate chips on top.

Bake in the preheated oven for 35-40 minutes, or until the oatmeal is set and the top is golden brown.
