Best Kale Salad Recipe

½ cup chopped roasted carrots, from 3/4 cup raw carrots 1/3 to ½ cup water ¼ cup extra-virgin olive oil 2 tablespoons rice vinegar 2 teaspoons minced ginger ¼ teaspoon sea salt Salad 1 batch Roasted Chickpeas 1 bunch curly kale, stems removed, leaves torn into bite-sized pieces 1 teaspoon lemon juice ½ teaspoon extra-virgin olive oil


In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper to make the dressing.


Place the sliced kale in a large salad bowl.


Pour the dressing over the kale leaves and use your hands to massage the dressing into the kale for about 2-3 minutes. This helps to soften the kale and infuse it with flavor.


Let the kale sit for about 10 minutes to marinate.


Add the grated Parmesan cheese, toasted pine nuts, and dried cranberries (or raisins) to the kale and toss everything together until well combined.
